Ingredients

  • 2 cups heavy whipping cream
  • 1 cup whole milk
  • 6 large egg yolks
  • 2 cups fresh strawberries, hulled and chopped
  • 1 cup granulated sugar
  • 1 vanilla bean, seeds scraped

Instructions

  1. Prepare the Strawberry Mixture:
    Combine strawberries, sugar, and vanilla seeds in a saucepan. Cook over medium heat until strawberries soften and sugar dissolves (5-10 minutes). Let cool.
  2. Make the Custard Base:
    Heat cream and milk in a separate saucepan until just simmering. Remove from heat.
    Whisk egg yolks in a bowl, then slowly temper them by adding the hot cream mixture while whisking continuously.
    Return to saucepan and cook over low heat, stirring, until it thickens (5-7 minutes).
  3. Chill the Custard Base:
    Pour custard into a bowl, cool to room temperature, then refrigerate for 1-2 hours.
  4. Churn the Ice Cream:
    Use an ice cream maker to churn the custard according to the manufacturer’s instructions. Add strawberry mixture in the final minutes of churning.
  5. Freeze:
    Transfer to a container and freeze for 2-4 hours until firm.

Notes

  • Ensure the custard does not boil to avoid curdling.
  • Fresh strawberries are preferred for the best flavor, but frozen (thawed and drained) can be used.
  • Adjust sugar for desired sweetness.
